Multi-strain Yogurt

Introduction

Yogurt is the most popular and readily available probiotic source however unfortunately most of the store bought yogurts have sugar content equivalent to a candy. This make this healthy kitchen staple one of the unhealthiest item in your shopping cart.

Most of the yogurt brands available in the market add other additives to enhance thickness, flavor and color which are all no good for your health.

Also most yogurts readily available contain single strain of probiotic. MyHealth Team not only wanted to experiment and see how we can make a healthier version of your vegan and non-vegan yogurts but also we wanted to see if we can make a multi-strain probiotic yogurt that can feed and support your gut-flora. We are using 24 strain probiotic in our recipe however you could use any multi-strain probiotic. The higher the number of strains the more you are helping your gut buddies and their species to thrive.

How to make

Vegan/ Non-Dairy Yogurt:

- We will be using Instant pot (IP) to make our yogurt, so wash it thoroughly. You could alternately boil the milk on stove. Take 32 oz or 4 cups of organic and unsweetened coconut milk in IP and click on “Yogurt” setting till you see “Boil” mode.
- Close the lid, put the valve on sealing and let the coconut milk boil.
- Once the milk boils, click on “Cancel” and open the IP.
- Let the milk cool down in the pot itself for half an hour.
- Take a spoon and do a skin test to ensure the milk is close to body temperature.
- Pour the mildly warm milk into 16 oz wide-mouth mason jars.
- Take the probiotic powder out of two capsules and mix it thoroughly in each 16 oz mason jars. So in total you will need four capsules for two 16 oz mason jars.
- Now if you wish you can add some confectioner’s swerve as per taste in one of the mason jars. This will add a sweet taste and swerve being derived from pre-biotic source doesn’t get absorbed by GI track. I personally prefer without any sweeteners.
- Wash the IP pot and place it back.
- Place the mason jars in IP and click on “Yogurt” setting till you see “8:00” hrs. I personally prefer to increase the timer to atleast 11-12 hrs for non-dairy milk. 8 hrs is minimum recommended time.
- Once the time completes, remove the mason jars from IP. If your coconut milk doesn’t have additives, you will see the water separate out from the yogurt and settle at bottom. You can drain the water by gently titling the jar and slowing pouring our excess water.
- If you prefer a thicker version of coconut yogurt then suggest adding Xanthum gum to the yogurt before refrigeration.This will allow to thicken the yogurt. I personally prefer to steer away from any additives so this step is optional.
- Place yogurt in refrigerator for 2-4 hrs before serving.



Plain & Sweetened Yogurt with Powdered A2 Milk:

- A2 milk is not readily available everywhere so I prefer to buy powdered form. It also has a longer shelf life so works perfect for me.I usually store the powder in refrigerator however you can place in any cool place.
- To prep A2 milk from powder, take 2 cups of water in a microwave safe glass container and heat for 2 mins.
- Add 1 1/3 cups of organic A2 powder and mix well in the hot water.
- Add 2 more cups of water to the mix.
- You should now have 1 liter or 4 cups of milk.
- We will be using Instant pot (IP) to make our yogurts so wash it thoroughly. You could alternately boil the milk on stove. Boil the A2 milk n IP using the “Yogurt” setting. Keep clicking the setting till you see “Boil” mode.
- Close the lid , put the valve on sealing and let the A2 milk boil.
- Once the milk boils, click on “Cancel” and open the lid.
- Let the milk cool down in the pot itself for half an hour.
- Take a spoon and do a quick skin test to ensure the milk is close to skin temperature.
- Pour the mildly warm milk into two 16 oz wide-mouth mason jars.
- Take the probiotic powder out of two capsules and mix it thoroughly in each mason jar. So in total you will need four capsules two 16 oz mason jars.

- Once the time completes, remove the mason jars from IP and place them in refrigerator for 2-4 hrs before serving.
- This should give you at least one jar of plain yogurt which can be used as a yogurt starter for your next batch.


Greek Yogurt with A2 milk:

- Greek yogurt is nothing but thick yogurt made by straining regular plain yogurt.
- All you need to do is strain your plain yogurt in a yogurt strainer or use any regular strainer to seperate out whey from solid yogurt.

Ingredients

  • High quality multi-strain probiotic capsules

  • For Vegan based yogurt, 4 cups of organic and unsweetened coconut milk

  • For Dairy based yogurt, 1 1/3 organic A2 milk powder or 4 cups of A2 milk

  • 1/2 teaspoon xanthum gum as thicker (optional) for coconut yogurt

  • Confectioners Swerve as per taste (optional) for sweetened yogurt

  • Two- four 16 oz wide-mouth mason jars

  • Yogurt stainer if you plan on making greek yogurt
